SQL Server Max Memory Setting - We should leave it alone as "0"

Since memory does not grow on trees; I came to the conclusion that RAM memory should not be limited to SQL Server or we should not reserve memory to Windows Server.  I feel like this is a valid argument regardless of the fact that the server is a dedicated server or not.

If anybody thinks that this is a risky or flawed argument, please feel free to express your opinion.

ps. we are not dealing with prehistoric versions of Windows and SQL Server … let's say anything after 2005 or after 2010.
